Army food and army cooks were the bane of army life and the butt of recruits' cruel jokes. That's history. Today's soldier in the SAF can expect his or her taste buds to be excited by the flavourful, nutritious and superior quality of army food.
Thanks to an upgrading and training programme, "Food and Beverage Management Course in Nutrition and Food Safety", for MINDEF Food and Beverage Managers launched in September 2007, 65 F & B managers have been trained to date. This on-going training programme coordinated by the Applied Food Science & Nutrition Department, and conducted by staff with relevant expertise from various departments, will help to train additional F& B managers in the coming months.
The highly motivated participants were taught Food Safety, HACCP, Basic Nutrition, Healthy Cooking and Food Service and were especially keen to learn about the nutritional value of the foods they ate, menu planning and customer service. Armed with their new knowledge, they returned to their charge of supervising the contractors involved in preparing the food for NS men at the various campsites.
Kalpana Bhaskaran, FSN Lecturer says, with a twinkle in her eye, that the soldiers, particularly those training abroad, can look forward to army food that is 'shiok!' and Singaporeans can sleep in peace knowing that a happy, well-fed soldier is probably a patriotic soldier.
