This Food Product Development Facility is capable of developing lab-scale products like carbonated drinks, spreads, baked products, desserts, sauces, pastes, etc. It supports the school's frozen dessert capabilities by developing prototypes that can be made in our training factory. All this is possible because the school has equipped itself with blast freezers, ice cream makers, carbonators, jacketed kettle, mixers as well as testing equipment like Aw meter, colourimeter, penetrometer, viscometers, Texture Analyser, to name a few.
In addition, we have a catering kitchen that is also able to scale up foodservice recipes for large quantity production. Last but not least, no product development work is complete with sensory testing. Hence the school is equipped with a state of the art sensory laboratory which is conveniently located together with the food product development laboratory. These booths in the Sensory Laboratory are equipped with coloured lights, sinks and even computer terminals to facilitate both consumer type or expert panel sensory testing .
